Ingredients:

1 cup quinoa

2 cups vegetable broth or water

1 red bell pepper, diced

1 avocado, sliced

1/4 cup red onion, finely chopped

1/4 cup fresh cilantro, chopped

1 lime, cut into wedges

1/2 teaspoon cumin

1/2 teaspoon smoked paprika

Salt and pepper to taste

Optional toppings:

Cherry tomatoes, halved

Shredded cheese or vegan cheese

Greek yogurt or sour cream

Salsa or hot sauce

Sliced jalapenos for heat

Step-by-Step Method:

Cook the Quinoa:

Rinse the quinoa under cold water to remove any bitterness.

In a medium saucepan, combine 1 cup of quinoa with 2 cups of vegetable broth (or water). Bring to a boil, then reduce heat to low and cover. Simmer for 15 minutes or until the quinoa has absorbed all the liquid.

Fluff the cooked quinoa with a fork and set aside.

  • Prepare the Black Beans and Corn:
  • In a skillet over medium heat, add a splash of olive oil (optional), then add the black beans, corn, cumin, smoked paprika, salt, and pepper.
  • Cook for 5-7 minutes, stirring occasionally, until the beans are warmed through and slightly toasted.

  • In a bowl, start with a base of cooked quinoa.
  • Add the black beans and corn mixture on top.
  • Layer with diced red bell pepper, chopped red onion, and avocado slices.
  • Sprinkle fresh cilantro on top for added flavor and a burst of freshness.
  • Add Toppings:
  • Add any optional toppings you like, such as cherry tomatoes, shredded cheese, or a dollop of Greek yogurt or salsa.
  • Squeeze fresh lime juice over the bowl for a zesty kick.
